marinated ginger and spicy pepper) are contained in bowls. The metallic
squeezer on the right is to squeeze garlic paste (fresh) from the holes.

This bowl of ramen (Yen850) is a new combination from July 2009 onwards.

Char Siu has been fried (but not steamed) on the surface, this would further enhance the flavor.

Half
piece of egg is served for this ramen. Please have a closer look to the
soup, it is of pale brown cloudy color. This is the result of boiling
pig bone, pork in water for several hours. There is also miso taste. It
is not like those pseudo-Japanese ramen shops serving soup of soy sauce
color, which has no pig bone and miso flavors but only message. This is
the reason why I seldom try Japanese ramen. But if I am in Japan, I will
try my best to eat more ramen.

I
seldom try Japanese ramen. But if I were in Japan, I would try my best
to eat more. Ippudo is a chain shop serving authentic Japanese ramen.
But please be reminded that not all branches in the chain serve ramen of
the same quality, there must be variation.
I
order a bowl of ramen at Yen850. This ramen is available from July 2009
onwards, in terms of the food combination. Apart from the signature
ramen in soup, there are also other Japanese stuffs. But it is suggested
to order the ramen only, and leave space in your stomach for other
foods. I particularly like the soup base which is the result of boiling
pig bone in water for several hours. Char Siu and egg are also very
tasty. Ramen texture is good but not outstanding. It is already the
authentic Japanese ramen I am looking for.
This
Ippudo is popular among the locals. Except Sunday, this Ippudo will be
closed at 0400 in the morning. It should be one of the last stops in a
day after your crazy shopping in Tokyo. Please be reminded that if you
finish your ramen in Ippudo ' early in the morning ', there is high
probability that there will be no subway train service. Your taxi fare
is surely more expensive than the price of a bowl of ramen. But it is
only a trivial matter to you.
