This
is very mouth-watering in color and appearance. But I do have a bit
disappointment. Its texture is not the same as what I expect beforehand
and not the same as those delicious negi I have tried in Tokyo and Hong
Kong. Meat texture is not soft enough, it is suggested to grill for a
longer time.
Honzawa
is a stall of grilled eel at the Fifth Street of Urayasu Fish Market in
Chiba. In the morning, citizens queue up for the freshly grilled eel.
To queue up for at least 20 minutes is needed.
Unagi sheets are ready to grill.
He bottles unagi sauce into small plastic container.
To
grill both sides repeatedly, for the sake of getting the best texture.
Each piece of negi has to dip into the sauce at least two times.
There are always not enough grilled unagi to cater for the need of customers.

It
is not anticipated to queue up for grilled unagi in Urayasu Fish
Market. There are snack shop and ramen shop in the market, but they are
all not my cup of tea. I prefer to spend time in queuing up.
Honzawa
is one of the two negi shops in the market, it gives me a nice and tidy
feeling comparatively. Everybody is waiting for the negi, no other food
stuffs are sold. Since it takes time to grill, there is always not
enough negi to sell. This is why the container is empty and everybody
can buy freshly grilled unagi.
It
is a good experience to see the whole process from fresh unati to
ready-to-eat grilled unagi. The unagi is very mouth-watering in terms of
colour and outlook. It has to be put into the mouth immediately. I am
so sorry that in reality the negi is not very tasty and the texture is
not soft enough as the scenario in my mind. But it is surely a valuable
experience to me.
