Sichuan Cold Noodle is served in a very presentable manner. It is not in small size.
After
mixing the spicy sauce, we are eager to have a try. It is still very
mouth-watering . It is getting more spicy at the end. But to me, it is
only in the elementary stage. Noodle is al dente in the sense of Chinese noodle.
Married Couple's Slices of Lung (夫妻肺片) is made of sliced beef, beef
stomach / lung / tongue in spice and Sichuan Pepper. It is a very famous
Sichuan dish.
'Sichuan Bitter Gourd' is the only non-spicy dish. It is cooked with sugar and soy sauce.
'Spicy Chicken Cubes in Chong Qing Style'. Chicken cubes are buried in
chili forest. This dish is quite spicy. The cubes have been fried
beforehand and then mixed with chili, but it is not dry. A delectable
dish.
'Sliced Fish in Spicy Soup'. Sliced fish meat is also immersed in
reddish orange soup. Fish meat is still tender and should be from fresh
fish. There is jelly noodle at the bottom.
'Stewed Spicy Beef' is not tough but very tender. It is also immersed
in a sea of reddish orange colour. The beef should have been cooked
for a long time beforehand. It is a delicious dish.
Twice Cooked Pork. Sliced pork is cooked with spice, vegetables and hot oil. It is also a very common dish in Sichuan cuisine.
We all like the noodle and finally we order one more noodle. But this time we order a 'Noodle in Soup'. It is not a spicy one.

We
select and book Yu Chuan Restaurant (YC) in advance. It is a speakeasy
in Wanchai in a commercial building. If it is full house, it should be
able to entertain about 30 diners at the same time. It is therefore
uncommon that the whole speakeasy is booked by a group of diners. YC is quite a roomy
speakeasy, in my experience. It gives us a neat and tidy feeling.
Servers are nice and attentive. It is therefore a relaxing experience in
YC.
Spending per head is fixed at $168. We order 3 cold dishes and 4 hot
dishes; and additionally a big bowl of noodle in soup. The average
spending becomes $180. It should be a paradise for spice-lover.
All
dishes are of spicy flavor. We may also request the degree of spiciness
to suit our special flavor. All dishes are delicious. But it is not
very original enough, mainly because it has modified the taste in order
to suit the locals. Particularly, we
deeply sense that YC should cook foods with more Sichuan pepper. But
this should not be noticed by most diners. Apart from this, YC is a
provider of spicy and delectable Sichuan cuisine in Hong Kong . In your
next visit, Stewed Spicy Beef and Spicy Cold Noodle are must-try dishes.
