A dinner hot pot meal in Xijiang Miao Village (西江苗寨). Please note an
IC Cooker is used. Three tails of fish are put into this big pot. Fish
is caught in the river. It is fresh and bouncy in texture.
Tofu is not too slippery. It is the texture I like more.
Fried Egg w/ Green Onion. The eggs are collected from hens in the county.

They also cook vegetable with spice and pepper. This dish is a bit oily.
'Fried Lard w/ Vegetable' is surely too fatty to us.

It should be a dream. We suddenly appear in this Miao Village and have
dinner of hot pot in the village Leader Home. The location is on the
top of a hill, overlooking the whole Miao Village, hill and river.
There
is no need to place order. All dishes are prepared in advance. What we
need to do is to accept, eat and try the authentic Guizhou flavor. There
are three small fishes, caught in the river, in the pot hot. The soup is
boiled from a mixture of green onion, tomato, red chili and spice.
Apart from this, five other dishes and a plate of tofu are served as
well. Most dishes and the hot pot are rich in spice and red chili, this
is the authentic flavor in Guizhou. The only dish without spice and red chili
is the fried egg w/ green onion. The eggs are collected from hens in
the county.
Two
pots of rice wine (with and without preserved plum) are served as well.
Though hot pot is not a form of meal I like, it is anyway a good
experience to try Guizhou hot pot with rice wine in such a beautiful
village and mild weather.
