Stinky
Tofu is a specialty of Hunan cuisine. It is freshly deep-fried and
still very hot. The surface is crispy but the special smell is not
disgusting (particularly for those who like this smell). Tofu is not
slippery but tough. We are lucky to have tried and ordered this dish.
Delipedia Hunan Stinky Tofu 湖南臭豆腐 Hunan Stinky Tofu is an authentic snack in Hunan cuisine. It is said
that if Hunan stinky tofu has not been eaten, it is not regarded to have
visited Changsha.
Tofu
is made from yellow beans in the normal way. It is then marinated in a
fluid of dried winter bamboo shoots, dried mushrooms and preserved black
bean. The white mould on tofu surface would turn grey gradually. The
smell initially is very stinky. When it is deep-fried in oil, the colour would turn black and tofu is
swollen finally. The black colour is most probably due to the presence
of preserved black bean.
Sometimes, it is easier to taste the natural and original flavour of
bean in this 'Stif-fried Bean'. It is cooked by oil, salt and water
only.
Rice is normally served in a wooden bucket. If the rice cannot be
finished, how to dispose of it? Or, just put all remaining rice from
different buckets into one bucket and serve to another table of unlucky
diners.

Xing Da Yong is quite good in outlook, its interior is so as well. It
is needed to select a restaurant with better environment, this is
important to enhance the overall meal quality.
We
would like to order dishes with less meat but at the same can try the
typical Hunan flavour. The dishes are not oily as we have informed to
cook with less oil. All dishes are quite delicious and not too much msg
is added. The most distinctive dish is the stinky tofu which is black in colour and the
taste is quite similar to the normal one. It is an enjoyable meal of
Hunan cuisine.
