The Chairman 大班樓 @ Sheung Wan 上環

Basically, only two soups are served in the Chairman. The other is sold out. This is soup of assorted beans, red date and cordyceps root. The taste is natural and it is of course msg free.

Tofu w/ Pig Chin in Soy Sauce. We guess pig chin should be similar to pork, but it turns out to be lard only. It is the first time to eat pig chin and we do not like it. Tofu is anyway delicious and the surface is still a bit crispy. The sauce is good too.

Japanese Dried Shrimp w/ Almond is one of the appetizers. Dried shrimp does not have any trace of fishiness.

'Braised Spareribs w/ Preserved Plums in Caramelized Black Vinegar' is nearly ordered by each table. The ribs have been marinated naturally and the meat is not tough or too tender. Of course, meat tenderizer is not available. Together with the yummy sauce, it is wise to order this dish.

'Steamed Dried Shrimp, Baby Dried Fish (White Bait) and Baby Squid' is a good companion of plain rice. The soy sauce is very tasty, enhancing the natural freshness of dried seafood.

Ice-cream is too rich in milk, the milk is very close that famous Japanese one from Hokkaido. Almond Sweet Soup is in fact not sweet, there is no need to be very sweet. It has a natural flavour of almond. You are recommended to order, it it is available.

It is needed to have a try in this prestigious Chinese restaurant. We have to know how the dishes are. It is also claimed to have added no msg, meat tenderizer and additive to the food. We really have to visit in person.

During lunchtime, it is better to order lunch sets. But we do not know whether we can order a la carte. For the lunch set, there are quite a lot of combinations. But for soup and dessert, there are two options only.

Since no msg, meat tenderizer or additive is added, we can try the natural taste of food materials and seasonings. On the other hand, food taste is not outstanding or very impressive. The most memorable items to us are the soup and dessert. We cannot give a food rating of 4/5 or 5/5 because it is the Chairman or no msg is added to dishes. But we deeply believe, at dinnertime, the dishes should be more delicious. We hope to have such meal soonest.

大班樓年初重奪米芝蓮一星,半年不到再下一城。今年亞洲50大最佳餐廳,位於上環九如坊的大班樓憑廣東菜成亞洲第一,是香港代表首次有餐廳登上首位。
