Braised
Mutton 手抓羊肉RMB58. We request to have brisket, and need to pay extra
RMB20 (original is RMB38). The special flavor of mutton is not too
strong. There is a small amount of white-colored mutton fat in the meat.
It would be of better taste if it is eaten with vinegar and garlic sauce.
Fried Black Fungus in Superior Stock 上湯雲耳 is a healthy dish. We select this dish, as we are not hungry in the dinnertime.
Fried Medlar Seedlings 清香枸杞苗 RMB12. Medlar is an important crop in
Ning Xia. When we see such item in the menu, we immediately order to
have a try. Frankly speaking, this vegetable is not too special to us.
Fried Rice in Yang Zhou Style 揚州炒飯 is not oily, and comes with green
bean, egg and carrot. It is a cooking method from the South.

To
travel in Yin Chuan (銀川), it seems to be a must to try in the most
renowned mutton restaurant – Lao Mao Restaurant (老毛手抓美食樓, LM). It has
nearly 92 years history in 2007 and was founded in 1915 (for information, please click http://www.laomao.com/).
Location
of the one we dined near Drum Building is similar to our Mongkok or
Causeway Bay in Hong Kong. Size of restaurant is large and restaurant is
in good decoration (in Yin Chuan's sense). Green color is the main
color of LM, including wall ,
servers' uniform, tablecloth and chopsticks. At the moment, there are 3
branches in Ning Xia (寧夏). From 1800 to 2000, it is the peak hours of
a day in LM. In Yin Chuan, in view of the diners communication and their dishes ordered, LM should be a restaurant in the top level.
Mutton
is of course the signature item is LM, which has developed its Yin
Chuan flavor. There are various kinds of mutton cooking method. We order
4 dishes only; the bill is RMB86 (average per head RMB22). It seems not
to be a sumptuous dinner as we have already eaten too much in afternoon tea.
But we should not miss this chance to have a dining in such a well-known
restaurant in Yin Chuan.
Delipedia Lao
Mao restaurant is renowned for its mutton in Ning Xia style, mainly
because of 3 characteristics - fresh, tender and savory. Besides, the
mutton will not have a greasy feeling and the special smell of mutton is
not too strong. To be served in the
meal as mutton, only wether (綿羯羊, the sheep has been castrated) in Ning
Xia will be selected. It should be of age from 8 months to one year
old, and the weight should be around 28 to 30 catty.
