Braised Big Eel w/ Ginger and Green Onion (薑蔥大鱔煲)
This
is one of the signature dishes at night. Quality eel (fresh and large
in size) is used. The portion is not too small, there are many pieces of
eel. Such cooking method can enhance the taste and texture of eel meat,
resulting that the meat would not be overcooked and too soft. There is
no trace of fishiness.
Fried Egg w/ Pickled Radish & Minced Pork (菜脯煎蛋)
This dish is normally of good taste, since it is not oliy and too salty. It is a dish for lazy guys, like us.
Signature Fried Chicken (燒雞)
This
is half bird, but it seems that the portion is less than half bird.
Taste is very good, this is why it is better to order once a table is
allotted. The chicken is claimed to be fresh, but I do not think so. But
I do not think that many patrons can tell the difference. If this is
not fresh (i.e. meat texture is not bouncy enough and ... ), it is
overpriced.

Wing
Hing is always crowded at night, it has quite a lot of loyal customers.
The main reason should be its stable food quality. In Wanchai, there
are eateries serving higher food quality, but pricing is correspondingly
or exorbitantly higher. There are also other tai pai tang typed
eateries, but food quality is correspondingly lower. Positioning of Wing
Hing is in the middle, its food quality on the other hand is much
higher than its positioning.
Wing Hing always gives me an
impression that there will be fighting immediately inside the
restaurant. It is of course only a wrong perception and false
expectation. We have not seen and heard any such fighting inside the
restaurant before.
For food, most dishes can still be maintained
at stable quality. This is the competitive advantage of Wing Hing and
this has been mentioned before. But there is no improvement of food
standard these several years. We would still have no disappointment
towards Wing Hing, notwithstanding we sense that food quality drops
slightly.
