Sushi Rice topped with minced fatty tuna (toro), salmon roe and sea urchin (uni).
Minced toro is fresh enough and natural sweetness can still be tasted.
Uni is creamy as egg yolk, there is no trace of fishiness . But salmon roe is a bit salty .
Sushi rice set is served with pouched egg (left) and braised potato with pork (right). They are both delicious.

Today
I order a lunch set only, including sushi rice topped with sea urchin
(uni), salmon roe and minced toro (fatty bluefin tuna belly in Japanese
cuisine). It also includes pickles, steamed custard egg, miso soup, and
dessert. About 7 minutes later, the set is served to me.
It goes
without saying that uni and minced toro are fresh enough. When they are
put into my month one by one, I can only sense how fresh they are. It is
also time to enjoy and taste fully what a fresh uni / toro should be.
Uni is as creamy as egg yolk, it has a natural sweetness. Toro recalls
me what freshness of fish should be. In addition to no fishiness at all,
it can only give me full satisfaction.
But for the salmon roe,
it is a bit salty. This implies that salt has been added to roe before
it is delivered to Hong Kong . Or, roe is not of very high quality.
Today dessert is Home-made Milk Pudding, it is rich in the natural
flavor of milk. Whether you can try this pudding next time greatly
depends on your luck, it is not served daily.
For a Japanese meal
of $220, it should not be a low price. But to try this sushi rice set
in such high quality and freshness, it is better not to take the dollar
sign into consideration. If you ask me whether I would try such rice set
again, my answer is definitely “yes”.
