It is a colourful dish. All shredded stuffs are to spotlight the presence of mushroom.

This is the portion served to each participant. It is not oily at all, though the chef has added considerable amount of oil. He should be able to master the food materials well. This can highlight the special nice flavour of mushroom.

Fried Mushroom w/ Bean Sprout, Shredded Bell Peppers & Fried Egg

This is the small bowl for each participant. It is of course very delicious, with chicken meat, mushroom (orange colour),   ... . FYI, msg is added.

Yunnan Cross-Bridge Noodle

The original dry mushroom is displayed in the exhibition of Yunnan Produces on the 8th floor.

This is the third dish in the demonstration. It is fried with chicken meat and red chilli. The sauce is not very strong and concentrated, in order that the special flavour of Matsutake would not be covered.

This is the portion served to each participant. Frankly speaking, it is a bit oily. Anyway, it is a delicious dish of matsutake. FYI, matsutake and other mushrooms are very nutritive, particularly to strengthen the body. It is rich in amino acids.

Raw matsutake is brown yellow in colour.

There is no need to be washed by water. What is needed is to peel off the outside brown surface.

Two head chefs from Horizon Hotel of Kunming demonstrates food material preparation, cooking and presentation.

Rationale of running this training institute is highly appreciated.

This is a cooking workshop of Yunnan cuisine organized by the Chinese Cuisine Training Institute. In a morning of about two and a half hours, three dishes are demonstrated by two head chefs of Horizon Hotel of Kunming (in Yunnan Province of the PRC).

They eagerly introduce each kind of food materials, particularly the wild mushroom. How rare and nutritive the wild mushrooms are are also included. Three dishes are cooked one by one. Each participant can share and taste each dish. Each dish is of course cooked to perfection. We are pleased to have the chance to learn more about wild mushroom and Yunnan cuisine. It is definitely a valuable experience to participate in the workshop.
