Braised Fish Maw w/ Spring Onion (醬爆花膠)
When the cover is taken away, there is a very alluring smell of spring onion. This certainly enhances our appetite, the portion is reasonable and normal. I do not know the original colour of this fish maw. But after cooking with oyster sauce, the brown colour is appetizing and alright.

Fish maw pieces are not those very thick ones, but this fish maw is already accepted by us. Imho, the nutritive content of thin and thick ones should be more or less similar.
It is cooked with oyster sauce and plenty of spring onion, there is no trace of fishiness. Taste of fish maw and spring onion are mutually enhanced. We are pleased to have ordered this dish, instead of the one with both fish maw and goose web.

Steamed Spare-rib w/ Taro & Pumpkin (荷葉南瓜芋頭蒸排骨) is unexpectedly served on a piece of lotus leave. Spare-rib is mixed well with preserved black bean paste. The presentation looks very good.

Overall taste is concentrated but not salty. This is a healthy dish. No meat tenderizer has been added, this is much appreciated. Taro and pumpkin have not been deep-fried in oil before. It is entirely a healthy dish.
We have ordered two dishes only. After placing order of two dishes, the order-taker (the boss?) leaves us immediately, without any wordings and facial expression. We therefore have not placed order of the third dish passively.

We would like to have something different, in the sense of dish cooking. If we dine in chained or large restaurants, dish variety and food material combination would be standard. It is needed to dine in small eatery, like Congee Kitchen, in order that something different can be savored.

Congee Kitchen is a small eatery, booking is a must. It seems that it is always occupied by family diners. Besides, there are three tables for two-persons dining. Totally, not more than thirty diners can be entertained at the same time.

We order two dishes passively. But if they do not want to earn more, it is their own business. In fact, with the not small dish portion, two dishes are still sufficient to us today. Frankly speaking, dishes are delicious and different, in view of food presentation and selection of food materials. For example, pork and vegetables are steamed on a piece of lotus leave, this (and the chefs) should be credited.

They may work overtime frequently, or their job duties are too routine, they should have some facial expression. It is not only for the good of diners, but also for the good of them and their health in the long run. This is anyway a service business.
