What is sushi rice
Is sushi rice the same as Japanese rice? Sushi rice is Japanese steamed rice seasoned with vinegar and used only for making sushi. In Japan, it's called sumeshi (vinegar rice).
Confusion arises when "sushi rice" is used as a label for common Japanese short-grain rice outside of Japan. Some recipes also sometimes refer to Japanese rice as "sushi rice".
In fact, regular Japanese rice is usually the regular rice in your daily diet, whether it's used in Japanese curry, donburi, or making onigiri.
It's only when you're using rice for sushi that you season the cooked Japanese rice with vinegar, salt, and sugar to become "sushi rice" or sumeshi.
