Butterfly Cake (French: Palmier) is a classic Western-style dessert popular in Germany, Spain, France, Italy, Portugal and Jews. It is generally believed that France invented this dessert in the early 20th century, and it is also believed that it was first baked in Vienna, Austria. It is generally believed that the development of Palmier is based on a change in the baking method of similar Middle Eastern desserts such as baklava. Because of its shape, in the West there are also images such as "palm leaves", "elephant ears", and "glasses". In Germany, this dessert is also known as "Schweineohren", which means pig's ears; because of its shape resembling a butterfly, it is called Butterfly Cake in Chinese.

In Hong Kong, in my impression and memory, Fine Food Cake Shop is the most famous for making butterfly cakes / Palmier . Of course, it was the glorious days when Tong Wong was the chef. How about now? Don't know. The taste of Palmier was definitely amazing.
Now, being promoted widely, it is even more noble in the pastry field in Hong Kong.
