蒸石斑魚
Steamed Grouper Fish

蒸石斑,應該是石斑魚最好的食法,可以把石斑魚的原味完全提出。
有些人有不同的意見,認為石斑魚要燜其他食材才更好味,由他們吧。
相信很都人的認知裡,石斑魚就是現在我們現在食到的石斑的質感。其實當然不是,聽叔叔伯伯提及他們年輕時,沒有現在這麼多的石斑魚,那時的都是海魚,魚肉比現在飼養的實很多,有質感。現在的石斑魚,上檯時魚肉已經散開。不過,肉味仍然是石斑魚獨特的味道。
要食最好的石斑,應該是清蒸了,不需要加果皮。蒸好加上豉油和熟油和蔥絲就可以。不過,蒸得剛剛好,石斑魚的肉仍然是好味的。
在酒樓食石斑最麻煩,如果是飲宴,很多人好像餓狗搶屎一樣,當然是非常貪心,後來的人就只可以喝豉油汁。
